Did you know that mushrooms absorb A LOT of water? You can tell they do because usually when you cook mushrooms after rinsing them, they release a ton of water into your pan which can make your mushrooms lack in the flavor department. Luckily, I have a tip for you on how to make your mushrooms super tasty! First off, when buying mushrooms, make sure to always buy organic. Secondly, instead of rinsing your mushrooms under water to clean them, take a damp paper towel and gently rub the dirt off the mushrooms to clean them. This reduces the amount of water absorbed from the mushroom. Now for the fun & tasty part.. since your mushrooms won't be soaked with flavorless water, they'll have the capacity to absorb marinades to make them extra delicious. (Serves 4)
Vegan, Gluten-Free, Soy-Free

2 cups of organic shiitake mushrooms
1/4 cup of soy-free teriyaki sauce (I love the brand Coconut Secret as it uses coconut aminos as the base instead of soy sauce)
Clean the mushrooms as described above and slice thinly. In a sauté pan, add the shiitakes and teriyaki sauce and sauté on medium heat for about 10 mins, stirring occasionally. Serve warm.
As I said above, these are a delicious addition to any dish and are packed with flavor. My favorite way to eat them is by rolling them into plant-based sushi!
