The star ingredient for the "chicken" is oyster mushrooms! Oyster mushrooms shred easily just like shredded chicken, and is a great plant-based option. The mushrooms also taste like whatever you put on them, which makes it awesome for pant-based BBQ "chicken." I love putting this on a pizza, or top it over some greens and a sweet potato! I have put both recipes below for you to try out and enjoy.


(Vegan, Gluten-Free, Soy-Free)
(Serves ~3)
Ingredients:
1 package of oyster mushrooms, shredded
1/2 of a red onion, sliced thin
3 cups of arugula
Gluten-free/vegan pizza crusts OR steamed sweet potatoes
Homemade BBQ sauce (recipe below)
Homemade BBQ Sauce
2 cups of tomato paste
3/4 cup of pineapple juice
¼ cup of maple syrup
1 tsp of smoked paprika
1 tsp of onion powder
1 tsp of garlic powder
½ tsp of cumin
¼ tsp of mustard powder
½ tsp of dried oregano
¼ tsp of cayenne pepper
Whisk BBQ sauce ingredients together until smooth.
In a pan, sauté the shredded oyster mushrooms and red onions together with 1 1/2 cups of the BBQ sauce. Cook on medium heat for 12-15 mins to make the BBQ "chicken."
Pizza directions:
Prepare your pizza crusts by spreading a few tablespoons of the BBQ sauce on top. Place a cup of arugula on top of each crust, then place the BBQ "chicken" on top of the pizza crust. Bake the pizza at 350F for 12-15 mins.
Sweet potato bowl directions:
Smash the steamed sweet potato in a bowl, top with a cup of arugula and the BBQ "chicken."
