Nori Rolls & Sweet Thai Sauce

Nori rolls are a fun and tasty way to get a lot of raw leafy greens and veggies in a meal. These are satisfying, filling and will leave you with lots of energy!

(Vegan, Gluten-Free, Soy-Free)

Nori Rolls

3 raw nori sheets

3 large handfuls of leafy greens (spinach, red leaf lettuce, butter lettuce, etc)

8-10 asparagus spears

1 small handful of sprouts

1 small cucumber, sliced

1 large carrot, peeled

1 small bell pepper, sliced

3 tbsp of water


Sweet Thai Sauce

4 dates, pitted

1 orange, juiced

1/2 cup of water

1 tsp of garlic powder

1 tsp of onion powder

1 tsp of oregano

1/2 tsp of paprika

1/2 tsp of cumin

pinch of chili powder


First, steam the asparagus until fully cooked. To make the nori rolls, lay the the nori sheet out on a flat surface and first layer a handful of lettuce towards the bottom half of the nori sheet. Then add a couple pieces of sliced cucumber, peeled carrot, sliced bell pepper, and 2-3 asparagus spears on top and in the middle of the lettuce. Before rolling it up, wet the top of the nori sheet so that it will stick together when rolled. Slowly and tightly roll up the nori sheet, make sure it sets, and then slice down the middle.


For the sweet thai sauce, blend all ingredient in a high speed blender until smooth.


Dip the nori rolls in the sweet thai sauce and enjoy!
