Coconut Vanilla Date Rolls

(Vegan, Gluten-Free, Soy-Free, Oil-Free)

(Makes ~20 rolls)

Ingredients:

1 package of Medjool dates

1/2 tsp of vanilla bean powder

1 cup of shredded, unsweetened coconut flakes


De-pit and de-stem the dates, and place them in a food processor. Make sure the inside of the dates do not have mold or anything weird looking. If they do, discard that date.


Pulse them in the food processor for a few minutes until they are formed into a big, round date ball.


In a separate bowl, mix together with your hands the vanilla bean powder and coconut flakes until the vanilla is coated on the coconut flakes.


Break off little pieces of the date ball (about the size of a quarter) and roll it between your hands until an oval shape occurs. Place on plate and repeat until the date ball is gone.


Lastly, roll the date balls in the coconut vanilla flakes until coated. Place in fridge or freezer and enjoy! They will last in the fridge for a month.
