This "fried rice" is overt fat-free but full of flavor. It's a healthier take on one of my favorite comfort foods!
(Vegan, Gluten-Free, Soy-Free)
1 package of riced cauliflower (~4 cups)
1/2 of a sweet onion, chopped
2 large carrots, diced
1 cups of green peas
1/2 cup of chopped broccoli
2 sprigs of green onions, chopped
1 garlic clove, crushed
1 1/2 tbsp of maple syrup
1 tbsp of coconut aminos
1 tsp of onion powder
1/2 tsp of crushed black pepper
Sauté the onion, carrot and crushed garlic in a bit of water in a medium frying pan on medium high heat for 10 mins. Add in the cauliflower rice, green peas and broccoli and sauté for another 10 mins. Add in the rest of the ingredients and stir together.
Serve warm. Enjoy!
