Now that it’s getting warmer outside, ice cream is always a fan favorite. I love making my own “nice cream” at home though since I don’t eat dairy and most of the dairy-free alternatives at grocery stores, and ice cream shops, have not-so-great ingredients like natural flavors, lots of gums, refined oils and processed white sugar. That’s why I like making my own at home - it's healthy, but will feel indulgent and satisfy those summer cravings. I hope you love it!

(Vegan, Gluten-Free, Soy-Free)
(Serves ~2)
Ingredients:
2 frozen bananas, cubed
1 tsp of maple syrup
1 tsp of vanilla powder or extract (I love using this vanilla powder)
Date syrup for drizzle (You can make your own by blending pitted dates and a bit of water or you can buy it. I like this brand.)
Puffed millet cereal to top
Blend the frozen bananas, maple syrup and vanilla until smooth. It should have an ice cream texture to it when it's done. Depending on the blender you have, you may have to frequently stop blending and push the ingredients down so that it keeps blending. Spoon the nice cream into a bowl and top with the puffed millet and date syrup drizzle.
