These doughnuts are delicious and can also be made into muffins or even a pound cake!

(Vegan, Gluten-Free, Soy-Free, Oil-Free)
(Makes ~12 mini doughnuts)
Ingredients:
1 1/2 cups of oat flour
1/3 cup of coconut sugar
1/2 tsp of baking powder
1/2 tsp of baking soda
1 tsp of cinnamon
1 tsp of vanilla extract
1 1/2 cups of dried apricots (sulfur-free)
2 cup of water
Preheat the oven to 350F. Soak the dried apricots in 2 cups of water for 45 minutes - 1 hour. Mix the rest of the dry ingredients together in a bowl.
In a blender, blend together the soaked apricots and only 1 cup of the soaking water, discard the rest of the water.
Mix together the dry ingredients with the blended apricots and other wet ingredients until smooth. Pipe the mixture in a doughnut pan.
Bake for 14 minutes and let cool for 5 minutes. Sprinkle some cinnamon on top to your liking.
